Old Style Chicken and Dumplings

This old style Chicken and Dumpling recipe was a favourite in our family and my sons enjoyed it almost every Saturday during fall and winter. They are adults now and still ask for it when they come for dinner with their families. Not difficult to make. Serves 6.

You will need: One medium chicken, one medium onion, 2 carrots diced, 6-8 potatoes quartered, 2 stalks celery, 8 cups water, salt, pepper, parsley. For dumplings – 2 cups white flour, 3 teaspoons baking powder, 1/2 teaspoon salt, 7/8 cups milk.

Directions: Cook skinned whole chicken in water and boil until tender. Remove from pot and remove bones from chicken. Add potatoes, onion, carrots and celery and cook until tender. Replace chicken and make dumplings. Mix flour with baking powder and salt. Add milk, mix thoroughly and drop from tablespoon into boiling water containing the chicken and vegetables. Put lid on and decrease temperature to medium for 10 minutes. Do not lift lid as dumplings will not be tender and plump. To thicken add 1/4 cup margarine or butter and add flour to make a thin paste. Stir into chicken and dumplings.
