Bacon Egg and Cheese Bake

You will need:
6 slices of turkey bacon
6 whole eggs
Thin slices of cheese for topping (mozzarella or havarti)
Salt and pepper Garden chives (optional)
Directions:

Preheat oven to 350F. Fill each muffin tin with 1 slice of turkey bacon making sure to cover the bottom and sides. Crack open 1 egg in each bacon wrapped muffin tin. Top with a dash of salt and pepper and cheese. Cook for 20 minutes, until eggs are cooked throughout. Top with your favorite herb, and serve.
