Sunday Steak with Grilled Ratatouille & Apple Slaw
This is a nice change from Sunday roast and takes only minutes on the BBQ. This hearty dish is loaded with fruits and veggies to make this meal complete, lower in fat and calories. Both or one of these vegetable dishes can be made. I like loading the plate! Enjoy with love!
You will need 6 Hilltop strip loin steaks, 1 tbsp. dried rosemary, 1/4 cup red wine, 1/2 tsp each salt and pepper
Ratatouille – 1 large eggplant, sliced into 1/2″ thick lengths, 1 yellow zucchini sliced into 1/2″ thick lengths (green can be used), 1/2 tsp salt, 1 clove garlic, peeled and minced, 3 tbsp. chopped Italian parsley, 1/4 cup Extra Virgin Olive Oil, 2 tbsp. white balsamic vinegar.
Apple Slaw 1 Mac or Ida Red apple, washed, cored and cut into slices, 1 red/orange or green pepper, seeded and cut into matchstick pieces, 1/2 mango, peeled and cut into matchstick pieces 4″ piece each of daikon radish, peeled and cut into matchstick pieces 4″ piece of English cucumber, cut into matchstick pieces 1/2 lemon, juiced and zested 4-5 leaves basil, chiffonade.
Directions: Marinade the steaks with wine, rosemary, and pepper for 1hr or overnight. When ready to BBQ salt both sides, place on hot grill and cook 5-8min on each side or to desired doneness.
Ratatouille: Place vegetable slices on the grill and cook for 5 minutes or more to achieve grill marks and vegetables are softened. (Eggplant skin will get very dark) Cut into the desired size for serving and mix with remaining ingredients.
Apple Slaw Mix all of the ingredients together and toss.
