Paprika Chicken and Noodles
You will need:
2lbs boneless skinless chicken thighs, 2tbs olive oil, 3-4tbs all-purpose flour seasoned with salt, pepper, Hungarian paprika, 1 medium onion roughly chopped, 1 green pepper roughly chopped, 4-6 mushrooms roughly chopped, 1tbs sugar, 1tsp dried oregano, 1tsp dried thyme, 1tsp dried marjoram, 1tsp dried basil, 3 tsp dried parsley flakes, ¼ tsp red pepper flakes, 2 bay leaves, 1- 28oz can diced tomatoes, 1small can tomato paste, 3tbs ketchup, ½ cup salsa. Franks hot sauce to taste (optional)
Multigrain spaghetti noodles
Heat oil in a large pot over medium high heat. Put flour, salt, pepper and paprika into a zip lock bag, add chicken close bag and shake until chicken is well coated. Add chicken to pot and brown 3-4 minutes per side, remove from pan. Add onions, peppers, mushrooms and spices to pot and sauté for 3 minutes. Add diced tomatoes, tomato paste, ketchup, salsa and hot sauce to pot, mix well and bring to a boil. Add chicken to pot pushing down into the sauce (make sure they are covered), cover pot, reduce heat and cook for 20 minutes stirring occasionally. Turn off heat and let sit covered for 8-10 minutes. Remove bay leaves. Serve over noodles and sprinkle with parmesan.
