Frozen Boneless Duck Breast

You will need: 1 duck, 2 stalks celery, 1 onion, 1 carrot, approx. 1 l of chicken broth, chicken/duck/goose liver, a pinch or fresh rosemary, a pinch of fresh sage, 1 cup of wine, one teaspoon of anchovies paste, 1 garlic clove
Directions: Finely chop 3/4 vegetables and place in olive oil to slowly stew for about 5 minutes or until lightly softened. Add the herbs to the mix. Add the duck cut into pieces and lightly fry with the veggies. In a separate pot, boil the chicken stock. In another separate frying pan, place the remainder of the veggies and the finely chopped liver to fry. Once the duck is lightly fried, add the wine. When wine evaporates, start slowly adding chicken broth to the pot with the duck. Let it simmer for a few hours slowly adding chicken broth. The side liver should be cooked in the same way, slowly, with wine and chicken broth until it becomes a paste like consistency.
At the end, when the duck is close to being done, add the liver mixture and a teaspoon of anchovies to the mix and cook together for approximately 20 minutes. Enjoy! 🙂
