This is a fall favourite at our house when there is still fresh sage in the garden and butternut squash are available at our local farmers market.
Butternut Turkey Sausage Pasta
You will need:
1 pound Hilltop Acres Turkey Sausage
1 large sweet onion (finely chopped) 4 cloves garlic (minced) 1 bay leaf
3 Tablespoons fresh sage (washed and cut into strips) 2 cups chicken broth (divided) 1 1/2 cups pureed butternut squash
1 cup evaporated milk 1/2 tsp tabasco sauce
salt and pepper to taste
500 g penne pasta and Parmesan cheese.
Fresh sage leaves to garnish
In a large frying pan, brown turkey sausage over medium heat. When turkey sausage is cooked, cut sausage into small pieces and set aside. In large saucepan, saute chopped onion and minced garlic for 3 minutes. Add the bay leaf, the fresh sage and 1 cup chicken broth. Cook another 3 minutes. Add the remaining chicken broth (1 cup) and the pureed butternut squash. Mix well. Stir over medium heat until sauce begins to bubble. Once sauce is bubbling, add sausage, and cook over low heat for 5 minutes. Remove bay leaf. Stir in evaporated milk, tabasco sauce, salt and pepper. Let the sauce gently simmer for another 10 minutes. While the sauce simmers, prepare your favourite penne pasta. Serve the Butternut turkey sausage sauce over the pasta. Garnish with fresh sage leaves and parmesan cheese.
