What Is Eggs Over Easy?

  2. The egg whites are fully set. But, the yolk is runny.

Sometimes, people will ask for “over medium” or “over hard.” While this uses the same method of cooking, it does not give you the same final product. So, it’s essential to know the difference.

Are Runny Eggs Safe to Eat?

I am sure you have heard not to eat raw eggs. (Even if it’s in raw cookie dough) For this reason, people are often concerned about runny yolks. Yet, you can safely prepare your eggs over easy. There are a few things to keep in mind when it comes to storing and prepping eggs.

  • For peak freshness, keep at 4° Celsius. Do not remove from packaging. Additionally, please keep them in the middle of your fridge. 
  • Avoid putting your eggs in the door of the fridge. The temperature is most likely to change in that spot. 
  • Use the “best before date” to ensure quality. Try not to buy more than you need. 
  • Always use the highest quality eggs you can find. Shopping locally is your best option. Ask us about our eggs! We have so many options for you to choose from.
  • Only take your eggs out of the fridge when you are ready to use them. Eggs should not be left out for more than 2 hours. If they are, it’s best to discard them.
  • Inspect your eggs. If any are cracked, throw them out. It’s not worth the risk.
  • After you flip your egg, be sure that the whites are set completely.
  • Stay away from “sunny side up” eggs. (Not flipped, with the whites being just set) While they can be consumed safely, if you aren’t 100% sure how to, you should stick to flipped eggs.
  • Serve right away!

Now, to prepare your dish is quite simple. Take your tortilla, and warm it. From there, add your refried beans. Cover most of the tortilla, and then top with cheese. Set aside and get ready to start your eggs.

For extra crispy edges, use a drizzle of olive oil in your pan. Then, proceed to fry your eggs. Remember, once you flip your egg, it should only need another 20 seconds or so in the pan. Just cook until the whites are set. You will want that runny egg yolk for this dish. It adds that bit of finesse.

Once your egg is finished, place it on top of your tortilla. Then, drizzle warm salsa across part of the egg. Lastly, top with pico de gallo. And VOILA! You have a delicious meal at any time of the day.
