Recipe Ideas with Turkey Sausage

Simple Skillet

Meet weeknight cooking at its best! Combining a few flavorful ingredients (turkey sausage, onions, garlic) with pantry staples (crushed tomatoes, Italian seasoning) and utilizing a simple cooking technique (grab that skillet), this recipe builds flavour with every step.

Here’s what we mean: Onions and peppers are sautéed in the drippings left behind from cooking the sausage. Aromatic garlic and Italian seasoning get added toward the end, so they have time to bloom (open up) without getting overcooked. Acidic tomatoes help release any flavor stuck to the bottom of the pan after the other ingredients have been cooked, to the benefit of the entire dish (and the dishwasher!). So the end result is a single-dish dinner alive with richly spiced sausage, silky cooked vegetables, and swimming in a tomatoey pan sauce.

Ingredients

  • 2 teaspoons olive oil
  • 1 lb turkey sausage links, cut into 1-inch slices
  • 1 1/2 cups sliced onions
  • 2 medium red, yellow, or green bell peppers, cut into strips (about 2 cups)
  • 2 teaspoons finely chopped garlic
  • 1/2 teaspoon Italian seasoning
  • 1 can (14.5 oz) crushed tomatoes, undrained
  • 1/4 cup chopped fresh basil
  • 1/2 cup grated Parmesan cheese

Steps

In a large nonstick skillet, heat oil over medium-high heat. Add sausage; cook 8 to 10 minutes or until no longer pink and completely cooked (at least 165°F). Using a slotted spoon, transfer to a plate, and keep warm.

Reduce heat to medium; add onions and peppers to drippings. Cook for 8 to 10 minutes, stirring occasionally, until tender. Stir in garlic and seasoning; cook 30 to 60 seconds or until garlic is fragrant.

Stir in tomatoes and sausage; heat to simmering, stirring occasionally. Reduce heat; cook uncovered for 8 to 10 minutes or until completely heated through.

Garnish with fresh basil and Parmesan cheese.

You can serve this just on its own, or cook up your favourite pasta and serve this on top!

Turkey Sausage Breakfast

This is a quick-to-prepare dish that will serve up nicely for a family brunch on the weekend!

Ingredients

  • 1 pound ground turkey sausage
  • 4 eggs, lightly beaten
  • 4 green onions, finely chopped
  • 1 (16 ounce) package frozen hash brown potatoes
  • ½ cup milk
  • 1 ½ cups shredded Cheddar cheese

Steps

Place turkey sausage in a large, deep skillet. Cook over medium-high heat until evenly brown. Drain, crumble, and set aside.

Preheat the oven to 350 degrees F (175 degrees C).

In a large bowl, stir together eggs, green onions, hash browns, milk, cheddar cheese, and cooked sausage. Pour mixture into a 9 x1 3 inch baking pan.

Bake in the preheated oven for 1 hour.

Turkey Sausage, Kale and Sweet Potato Soup

Ona cold night a warm soup may be just waht is needed and this recipe is a delicious way to use up sweet potatoes! This is an easy, hearty soup recipe made with smoked turkey sausage, kidney beans, nutritious sweet potatoes, kale and spices. It’s a hearty and colorful soup that’s perfect for a cold evening.

Ingredients

Serves 6

  • 13 oz fully cooked turkey sausage (cut into 1/2-inch thick slices)
  • 1 1/2 cups chopped yellow onion (1 medium)
  • 1 large sweet potato ((about 1 lb) peeled and diced into small cubes (3 cups))
  • 4 cloves garlic (minced (4 tsp))
  • 1 tsp ground cumin
  • 3/4 tsp ground coriander
  • 1/4 tsp chipotle chili powder (more or less to taste)
  • 4 cups chopped fresh kale
  • 1 (14.5 oz) can dark red kidney beans (drained and rinsed)
  • 6 cups low-sodium chicken broth
  • 1 tbsp olive oil
  • 1 tsp paprika
  • Salt and freshly ground black pepper

Steps

  • Heat olive oil in a large pot over medium-high heat. 
  • Add onion and sauté 5 minutes, then add sweet potato and sausage and cook, tossing occasionally for 3 minutes. 
  • Add garlic and cook, tossing occasionally, 2 – 3 minutes longer. Pour in broth, then add in the paprika, cumin, coriander, chipotle chili powder and season with salt and pepper to taste. 
  • Bring to a light boil, then reduce heat to medium-low. Cover and simmer, until sweet potatoes are nearly tender, stirring occasionally, about 5 – 10 minutes. 
  • Add kale and kidney beans and cook 5 minutes longer. Serve warm.
