How to Successfully Grow Vegetables for Soup

Choosing a Location

First and foremost, garden location is vital. As we mentioned, think about the amount of space you have. Then, go from there. Keeping in mind, vegetable plants need full sun to grow. That means at least 6 hours per day. Each plant also needs proper spacing to grow efficiently. Less is more.

Preparing the Soil

To emphasize, it is critical to prepare the soil before planting. If you are planting directly into the ground, check the type of soil you have. For raised beds, choose a growing medium with good drainage. Your soil should also be rich in nutrients. Add some compost to help with that.

Vegetable Garden Layout

To start, you want to place the tallest crops on the north or west side. This way, they won’t shade the smaller plants. In other words, tomatoes, corn, and beans. (tallest crops) In terms of the rest of your plants, there are a few guidelines to follow. In particular, you want to plant crops that work well with each other. But more importantly, you want to avoid vegetables that don’t.

For instance, potatoes should be kept away from tomatoes. And, garlic should have its own spot. We should also mention that garlic must also be planted in the fall! So while it is too late for this season, you can be ready for next. You’ll be harvesting garlic next spring.

Garden Maintenance

Vegetable gardens are more resilient than people think. Just a little love here and there. As a rule, your crops only need 1 inch of water per week. That includes any natural rainwater. Otherwise, just keep on top of your weeds. If weeds become overgrown, the roots of your crops will suffer.

Herbs & Spices

Chicken Stock Recipe

Ingredients

  • Roasted or Raw Chicken Carcass or 4-5lbs of chicken backs/wings
  • Celery Tops + 1 Rib of Celery
  • 1 Large Onion
  • 1-2 Carrots
  • 2-3 Garlic Cloves, smashed
  • Bundle of aromatics – thyme, bay leaf, parsley

As a note, just give your vegetables a quick rough chop. Keep it simple!

Method 1: Chicken Stock Recipe Using Whole Chickens

Currently, Canadians are looking for ways to make groceries last. So, it’s essential to realize that buying individual cuts of meat is often less cost-effective. To clarify, we suggest buying whole chickens. As a result, it provides dual uses. Just place the bones in a large pot with the vegetables & aromatics. Then, cover with water. Bring to a boil, and simmer for 4 hours. Strain the liquid, and you’re done.

Method 2: Chicken Stock Recipe Using Chicken Bones

Alternatively, you can choose to use smaller bones such as chicken wings or backs. The method is almost the same. However, first, you must brown your bones. Heat over medium-high with olive oil. Once the bones are visibly brown, continue with the steps from method 1.

Store your stock in the fridge for 3-4 days. You can also extend the shelf life by freezing. In a deep freezer, stock lasts up to a year! So, stock up. Pun intended.
